The basis of ancient Greek diet was consisted of cereals which mainly used in bread making. They manufactured bread from wheat, barley and millet. In contrast to the contemporary eating habits, bread had a special place among ancient Greeks, since they used to eat bread in every meal. It is noteworthy to mention that their meals were really small except from the dinner which was rich. The most common ancient bread was called “maza”. This was made from barley, kneaded in ships' biscuits. In the dough of bread was put various spices such as fennel, spearmint and peppermint, to get the bread a different zest. “Artos” was the luxury version of bread, made of wheat and consumed by rich people.
