decide to visit Puglia...the
heel of
Italy, the period I would
recommend Christmas time.Why?Because you won't find ectreme cold and...the typical Christmas sweets will delight
your palate.
For centuries,
the cartellate
have always been present on the
table of Apulian families, even of the most humble ones. Flour, water, white wine, oil and figs or honey and nuts, reconnect us to the rest of the
Mediterranean.
The cartellata is
a small basket made of a thin layer of pastry (fried or baked), covered with the juice of cooked figs or with honey and nuts (depending on the area of Puglia). According to the popular tradition it stands for the
sheet where the Little Jesus was wrapped. As for the name,according to some scholars, it should come from the ancient Greek word κάρταλλος = basket, due to its shape.
